Apple Pancakes!!

my version of a misen poix, apples, flour, maple syrup and an egg.maple syrup drizzling over fresh grated apple.
Good Morning!!!  I had a beautiful, crunchy apple in the fridge…. and I wanted pancakes, that were (relatively) healthy.   Here’s what I put together.  They were absolutely delicious and I think we’ll be having them again and again!!  So simple and easy, you’ll be shocked how delicious there are!!  

Apple Pancakes:

  • 1 apple, any variety
  • 2 tablespoons maple syrup
  • 1 egg
  • half cup of flour
  • 1/2 teaspoon of cinnamon (if you want, more if you like it)
  • butter for the pan

Grate the apples using the largest holes on a box grater and set aside.  In a mixing bowl, combine the maple syrup and the shredded apple and then add the egg.  Stir to combine.  Add the flour and cinnamon to create a beautiful batter. Heat the butter in a pan over medium heat.  Add spoonfuls of the batter to the pan to make whatever size pancakes you like.  Cook a couple minutes on each side until the pancakes have become a beautiful golden color.  They are bursting with so much apple flavor and sweetness, I doubt you’ll need syrup but feel free to serve with syrup, jam, powdered sugar or fresh whipped cream (yum!!!).  Serves 2-3.  I have to tell you me and my 2 roommates definitely could of split a second batch, so maybe double the recipe if you have hungry people to feed.  Enjoy!

    you guys!!!! thanks for all the love!!! i’ll make you breakfast anytime! so easy…. try it for yourself. Oh and I made them with blueberries instead of the apple and they turned out delish, too. xxxxxxxxxxxxxx
